- 6 eggs
- 2 cups sugar
- 1⁄4 cup vegetable oil
- 1 teaspoon lemon extract
- 7 1⁄2 cups all-purpose flour
- 6 teaspoons baking powder
- 2 teaspoons salt
- 1 teaspoon ground nutmeg
- 1 cup milk
- oil (for deep frying)
- powdered sugar
directions
- In a mixing bowl beat the eggs, sugar and 1/4 cup vegetable oil.
- Add lemon extract, mix well.
- Combine the flour, baking powder, salt and nutmeg, stir into egg mixture alternately with milk.
- Cover and refrigerate over night.
- Divide dough in half.
- Roll out one portion to 1/4 inch thickness.
- Cut with a floured round 1 1/2 inch cookie cutter.
- Repeat with remaining dough.
- In an electric skillet or deep fryer heat oil to 375°F.
- Fry doughnuts for about 4 minutes or until golden brown, turning once with a slotted spoon.
- Drain on paper towels.
- Sprinkle with powdered sugar.
