For my nephew; he doesn't like cheese but you could put it on if you like. Ore ida has obrien potatoes that would make this easier.

This is a deliciously hearty breakfast full of veggies and meat. Made as directed (except for the sausage) and it turned out very nice. Loved the addition of the potatoes, mushrooms and spinach. I did cook the potatoes for a longer period of time on top of the stove just to be sure they were going to be tender enough. This makes a great breakfast or brunch dish for sure. - 4 slices bacon
- 1⁄2 lb sausage
- 1⁄2 lb mushroom, sliced
- 1⁄2 cup onion, diced
- 1⁄2 cup red bell pepper, diced
- 6 potatoes, peeled, diced
- 1 garlic clove, crushed
- 1 teaspoon paprika
- 1⁄4 teaspoon sage
- 1⁄4 lb Baby Spinach, minced fine
- 1 scallion, chopped
- 8 eggs, beaten
- 1⁄2 cup cheese, shredded (optional)
Directions See How It's Made
- Fry bacon and sausage; remove.
- Spray Pam around pan also.
- Add onions, pepper, potatoes and garlic to grease/Pam mixture.
- Add paprika and sage.
- Cook until almost done.
- Add crumbled meat back.
- In greased casserole toss skillet items with spinach.
- Pour into casserole.
- Pour over eggs, scallion, and cheese if you like.
- Bake at 425 degrees Fahrenheit for 15 minutes until eggs are set.
