Excellent recipe!! We are big fans of chorizo and eggs, so this was right up our ally. Loved the way this cooked up and so easy. A couple questions....how much garlic and oil? I did enough oil to cover the pan and one clove of minced garlic and it turned out fine. I also microwaved the potato and diced/peeled it to save time and it turned out great. This would be great with some tortillas on the side :) Thanks for the great recipe!!
