Chopstick Turkey Casserole

This is a great recipe for leftover turkey; It is from an old newspaper in Toronto - The Evening Telegram- printed some 30 years or more ago.

Ingredients Nutrition

  • 1 12 cups diced cooked turkey or 1 12 cups diced cooked chicken
  • 1 (10 ounce) can mandarin oranges
  • 1 (10 ounce) can condensed mushroom soup
  • 1 cup chopped celery
  • 14 cup chopped onion
  • 12 cup chopped salted nuts
  • 2 ounces chow mein noodles (the ones in the can)

Directions

  1. Cut turkey in bite size chunks.
  2. Drain mandarin oranges reserving 1/2 cup of the syrup.
  3. Beat mushroom soup until smooth and blend in 1/4 cup of mandarin orange syrup Add turkey, mandarin oranges, celery, onion, nuts and half of the noodles.
  4. Turn into buttered baking dish.
  5. Top with remaining noodles.
  6. Bake in moderately hot oven, 350-375 for about 30 minutes or until bubbling.

This is a great recipe for cottage living. Serve with a nice white wine, salad and rolls.

This was a different way of using leftover thanksgiving turkey...and we really enjoyed it! I added some pepper and 2 caps of low-sodium soy sauce...I used asparagus that I needed to use and subed cashews for salted nuts....Everyone inhaled it! Thanks for a great change of leftover turkey! will make again...please note...this did not do well the next day...so would plan on finishing it the first night...the chow mein noodles got really soggy...

Sorry, I forgot to post this earlier. I used up the last of Our Thanksgiving turkey with this casserole. It was very good, especially with the crunch of the nuts. The oranges gave it a little different flavor. DH and I liked it better than the kids, but I think they may have just been sick of turkey at this point. LOL Thanks Roberta for posting.
