Chopped Vegetable Salad With Garlic Dressing

ingredients

• 2 cups chopped English cucumbers
• 1 cup chopped red bell pepper
• 1 cup chopped yellow bell pepper
• 1 cup chopped plum tomato
• 1⁄2 cup chopped green onion
• 1 tablespoon fresh lemon juice
• 1 teaspoon olive oil
• 1⁄2 teaspoon salt
• 1⁄4 teaspoon Dijon mustard
• 1⁄8 teaspoon fresh ground black pepper
• 2 garlic cloves, minced
• 6 leaves red leaf lettuce

directions

1. Combine first 5 ingredients in a large bowl.
2. Combine lemon juice and next 5 ingredients in a small bowl and whisk well.
3. Pour dressing over vegetables and toss to coat.
4. Line serving bowl with lettuce leaves and fill with salad.
5. Enjoy.
