I loved this dressing with all the chipotle--love it hot! I would omit the Doritos--like the crunch, not the calories! Good, basic salad that you can add or take away items.

I quartered the recipe and used chickpeas instead of black beans cause I had some already open. I loved the dressing! I did cut back a little on the chipotle(can't handle too much heat). Loved all the veggies! I also added some cucumber. I did need to add a little salt. Thanks and good luck!

A must try indeed! I used the ingredient list (in reduced amounts) to make two large main dish salads on a hot summer evening. I liked the fact this was EASY, fast, and a full meal. I made the full amount of the dressing and am glad I did! I ended up adding an extra chipotle after tasting and the heat level was perfect for us. The dressing really is the star of the show & blends so well with the creamy avocadoes, corn, tomatoes, black beans, etc. I will definitely be making this again! Loved the dressing. =) I do think for a potluck presentation I might try serving this as a layered salad in a clear glass bowl. The colors would be visually attractive layered. 5 stars from both of us.
