Chocolaty and Gooey Brownies

1 pan brownies
ingredients
- 236.59 ml butter, softened
- 473.18 ml sugar
- 78.78 ml unsweetened cocoa (we use Hersey's)
- 4 eggs
- 354.88 ml flour
- 9.85 ml vanilla
- 2.46 ml salt
- 354.88 ml nuts (optional)
- 453.59 g miniature marshmallow (see note in description)

FROSTING
- 315.37 ml powdered sugar
- 118.29 ml butter
- 78.78 ml unsweetened cocoa
- 78.78 ml evaporated milk
directions
- Preheat oven to 350 degrees Fahrenheit.
- In a large bowl combine the 1 cup softened butter, 2 cups sugar, 1/3 cup cocoa and the 4 eggs.
- Stir in the flour, vanilla, salt and nuts (if using).
- Pour into greased 1-inch deep baking sheet (or a large baking pan; we used a 9 x 13 pan but had to cook the brownies longer).
- Bake for 20 minutes.
- Cover with marshmallows. (I used quite a bit less but with great results).
- Bake 3 to 5 minutes so marshmallows can melt.
- To make frosting: mix together remaining ingredients (1 1/3 cups powdered sugar,butter, cocoa, and evaporated milk) using an electric mixer.
- Frost brownies when brownies are cool.

I made these brownies as listed except for omitting the nuts. After adding some (not full quantity) of the marshmallows I found that it got quite messy. I ended up scraping the marchmallows off and just leaving a thin glazy layer. I then added the frosting. I found the frosting to be the best part of the recipe. The brownies themselves were to us more chocolate cakey than like a brownie. The brownies would have been too sweet if I had not removed the marshmallows. But we did like the hint of them, though.

YUMMY! This is chocolatey and gooey but I think a better name would be something like Rocky Road Delight. If you like Rocky Road you'll love this! It was pretty easy to make but hard to cut through the marshmallows. I made it in a 13x9 and baked it for 30 minutes. I used coarsely chopped pecans. I used the full amount of marshmallows and had no trouble with the frosting. Because of the frosting I assumed it needed to be refrigerated but then you need to let it sit out before cutting it or it's too hard. Anyhow all of the adults at my work LOVED this and I can see it would be a real WINNER with kids too!
