Chocolate Upside Down Pudding

- 1 cup flour
- 2 teaspoons baking powder
- 1 pinch salt
- 3⁄4 cup sugar
- 1⁄3 cup shredded coconut
- 2 tablespoons oil
- 1 teaspoon vanilla
- 1⁄2 cup milk

Topping
- 4 tablespoons cocoa
- 3⁄4 cup brown sugar
- 2 cups hot water
directions
- Mix dry ingredients.
- Add vanilla, oil and milk. Mix.
- Press into a greased 9 x 13 pan.
- Sprinkle cocoa and brown sugar over top, and pour hot water over all. DO NOT STIR.
- Bake 350 35-40 minutes.
