Chocolate Streusel Pecan Muffins

A very rich and chocolaty muffin, this is perfect with a cup of hot tea or coffee or as a snack. I use semi-sweet chips myself because the milk chocolate makes for a very sweet muffin; just sub a bag of semi sweet chips.

  2. COMBINE flour, brown sugar, cinnamon and 2 tablespoons melted butter butter in small bowl with fork until mixture resembles coarse crumbs; stir in pecans.
  4. PREHEAT oven to 375° F; grease or paper-line 12 muffin cups.
  5. COMBINE 1 cup morsels, milk and 3 tablespoons butter in a microwave safe bowl; microwave on full power for about 60 seconds and then stir until morsels are melted and mixture is smooth; if not fully melted, put back in for 10 second intervals.
  6. COMBINE flour, sugar, baking powder, cinnamon, pecans and remaining morsels in large bowl.
  7. COMBINE egg, vanilla extract and melted morsel mixture in small bowl; stir into flour mixture just until moistened.
  8. Spoon into prepared muffin cups, filling 2/3 full then sprinkle with Topping.
  9. BAKE for 20 to 25 minutes then cool in pan for 5 minutes; remove to wire rack to cool completely.

These are pretty good! Mine were a bit on the dry side, but the overall flavor is good. We loved how the topping got a little crunchy. Easy to whip up when you want a quick and sweet snack. Thanks for sharing.:)

These muffins are incredibly delicious!! I took Janet's advise and used the semi-sweet chips instead of milk chocolate because I also prefer that type of flavor. These were so gloriously scrumptious...very decadent - the day I made them I ate 2 as a "snack" because I was feeling blue and they cured me of all my troubles...I had to hide the rest from myself!!! I gave them out to the ladies at my office and they were absolutely floored by the chocolate heaven of these muffin creations!! - Janet - thank you so much for sharing this JOY!! The kids loved these. I did not have enough milk chocolate chips in the pantry so I mixed half milk and semi sweet chips. These were easy to prepare. thanks for the recipe.
