  • Heat oven to 180c. Grease a 20cm x 30cm tin.
  • Melt butter,sift flour,baking powder into a bowl. Stir in cocoa,coconut and sugar. Stir in melted butter and mix well. A little extra butter may be needed if it feels a bit dry. Press firmly into tin.
  • Bake 10-15 minutes.
  • Ice while warm and cut into squares.
  • A little extra coconut can be sprinkled over the top of the icing if desired.

  1. Actually more like 4 1/2. What kind of icing should go on this? It didn't last long enough; everyone gobbled it up before I iced it. it was like a dry & crumbly brownie. I think it needs more cocoa or some chocolate. The coconut adds nice texture and flavor. VERY quick & easy. It was oven ready before the oven was ready! This will get made again just because it is so fast & easy. Made for PAC Spring '10.
     
  2. Great recipe. I made this in like 10 minutes and iced it just before i picked the kids up from school. Everyone loved it. I didnt bother putting the extra coconut on top i didnt feel it needed it.

Im a busy mum of three well four if you include my husband! Lol... I really enjoy cooking :) Main meals are my favourite, and i enjoy all types of food!!
