This frosting goes great with Cuba Libre Cupcakes
- 1 1⁄2 cups confectioners' sugar
- 4 ounces cream cheese, at room temperature
- 1 1⁄2 tablespoons dutch process cocoa
- 1 tablespoon good rum
- In a large bowl, mix together all ingredients until smooth. Use to frost cool cupcakes or cake.
Im sorry to give this recipe such a low rating, but I just didn't really care for it. The icing tasted purely of powdered sugar. There was a very, very slight cream cheese taste, and you couldn't taste the chocolate or rum at all. Maybe that's the way its supposed to be? I'm not sure. Thanks for posting anyway!
