This smells delicious when it is cooking
- 2 cups cooked rice
- 2 cups milk
- 1⁄2 cup sugar
- 3 tablespoons cocoa
- 1⁄2 teaspoon salt
- 1 teaspoon vanilla
- 1 tablespoon butter
- Place cooked rice and milk in top of double boiler.
- Mix in sugar, cocoa and salt.
- Cook over boiling water 45 mins, stirring occasionally.
- It should be creamy.
- Add vanilla and butter before serving.
Warm from the stove, this had a flavor and texture similar to Chocolate Malt-O-Meal (a childhood favorite of mine). Cooled, the chocolate flavor was perfect, but I found myself not really caring for the texture of the rice. Of course, what did I expect? It IS rice pudding; it's supposed to have that texture. Overall, while time consuming to prepare, this isn't a bad recipe, but not something that I will likely make again.
