I developed this for my Weight Watchers diet. I found the recipes calling for 1 can of pumpkin and 1 cake mix were too stiff and dry, so I tinkered around with it.
- Pre heat Oven to 350.
- Mix all ingredients in bowl.
- Spray muffin tins with cooking spray.
- Fill tins 3/4 full.
- Bake 20 Minutes.
Great recipe! I substituted 2 eggs and regular chocolate pudding mix. This still keeps the recipe much lower in fat and calories than many others. I baked the cakes in a mini bundt pan for about 24 minutes. Easy and delicious!
