Chocolate Pudding Cake (low Calorie)

You'd never know this cake is low calorie and has only 1 gram of fat per serving. It doesn't have to be served warm -- it was good even after being in the fridge.

  1. Spray a 13 x 9 x 2-inch baking pan with cooking spray and set aside.
  2. In a large bowl, whisk together flour, sugar, cocoa, baking powder, and salt.
  3. Whisk in remaining cake ingredients, blending thoroughly.
  4. Pour into baking pan, spreading evenly.
  5. In a large bowl, whisk together pudding ingredients until sugar and cocoa are dissolved.
  6. Pour carefully over batter.
  7. Pudding layer will be thin and runny.
  8. Bake for 35-40 minutes, or until top is firm to the touch. (toothpick inserted will not be an accurate test for doneness)
  9. Let cake rest for 15 minutes before cutting. Cover and refrigerate leftovers for up to 7 days or wrap tightly and freeze for up to 2 months.

I thought the cake was GREAT for a low calorie option. My husband couldn't believe it was only 153 calories a serving and less than 1 gram of fat. I would definately recommend to my dieting friends.

I made this for my birthday and loved it! It came out so moist. I didn't think it was too sweet. We all had seconds. Its great warmed up with ice cream on top or chilled. Thank you!

My family thought this cake was "weird." The pudding soaked through the cake and left it nicely moist. However, the cake was fairly tasteless and had an odd texture once refrigerated. Pudding messily gathered at the bottom of the cake; this was also too sweet for my taste.
