  • Mix cornstarch, sugar and salt in the top of a double boiler.
  • Stir in milk and chocolate.
  • Place over boiling water and stir constantly until thick and smooth.
  • Cover and cook 15 minutes longer, stirring occasionally.
  • Stir vanilla into recipe chocolate pudding.
  • Refrigerate until chilled.

  1. This made a nice pudding, in the end. It's not rich, since it does not include egg, cream or butter, but it is pleasant, and very economical (especially if the chocolate used is inexpensive.) I used Hershey's chocolate chips, so it was not expensive to make. My only problem, and it could be viewed as a big one, was that after overnight chilling, my pudding was only a sauce. I then emptied the bowls into a saucepan and heated the mixture over moderate direct heat, stirring constantly, and watching out for burning, until it was as thick as pudding should be. I then cooled the pan in cold water, put the pudding into cups and refrigerated them. This worked. I think the problem in this recipe is the 15 minutes cooking with the lid on, in step 4. I followed the directions, but thought at the time that condensation would thin the pudding. It did. Maybe cook with the lid on for a few minutes, but not for such a long time, And, make sure that the mixture is fairly thick before thinking about chilling it. I will use this recipe again, but not follow all of the directions. Thank you for posting.
