Adapted from the Compassion Over Killing Vegetarian Starter Guide.
- 1 1⁄2 cups rice milk
- 3 tablespoons cornstarch
- 1⁄4 cup cocoa powder
- 1⁄4 cup maple syrup
- 1⁄4 teaspoon vanilla extract or 1⁄4 teaspoon peppermint extract or 1⁄4 teaspoon coconut extract
- whipped cream
- Combine all ingredients except for extract and whipped cream in a medium saucepan over medium heat. Whisk rapidly until mixture is smooth heating until pudding thickens. Stir in extract and mix well. Pour into individual dishes. Refrigerate until chilled. Serve with generous dollop of whipped cream.
- Note - Fee free to substitute soy milk for rice milk.
I've rated without starts as it didn't quite work for me but I am sure this was because I used golden syrup instead of maple. The taste was nice and although it looked a little odd it was gobbled by all. I passed the recipe onto my vegan friend who reports it is very good (when done properly :) ) A great recipe and im sure it will be used again often!
