This is very quick and easy to make. The family loved it.

  1. Mix the the cornstarch, cocoa, sugar and salt well in a 2-quart saucepan. Gradually add in the milk and cook over medium heat stirring constantly. Bring to a boil and boil for one minute stirring constantly. Remove from heat and add in margarine and vanilla.

It was 109 here today with excessive heat warnings and we are being asked to conserve energy. This was a wonderful, quick treat to whip up on the stove-top before the peak hours of 3-7. It is really good! I think I will try freezing a serving to see how that works out. I used butter for the margarine and 2 percent milk. KayK, thanks for a great recipe! It's a keeper!

This was so easy, I'm never buying boxed mixes again. I added a bit extra cocoa because I like extra chocolate flavor (I would always add extra to box mixes, too), and I switched the margarine for 2 T butter. I don't like my pudding to be too thick, so I didn't let it boil, but turned off the heat just before it started to bubble. It was the perfect consistency for me. Yummy.
