Chocolate Peanut Butter Cupcakes

ingredients
- 177.44 ml flour
- 59.14 ml unsweetened cocoa powder
- 7.39 ml baking powder
- 0.25 ml salt
- 118.29 ml granulated sugar
- 118.29 ml packed light brown sugar
- 59.14 ml unsalted butter, at room temperature
- 118.29 ml crunchy peanut butter
- 1 egg
- 2.46 ml vanilla
- 157.80 ml low-fat milk
- 118.29 ml semi-sweet chocolate chips
directions
- Preheat oven to 350°F Line 12-cup muffin pan with paper liners.
- In a small bowl, mix together flour, cocoa powder, baking powder and salt.
- In a large bowl, using electric mixer, beat together granulated and brown sugars and butter until well combined.
- Add peanut butter, beating until smooth. Beat in egg and vanilla until mixture is smooth.
- Alternately beat in flour mixture and milk, making three additions of flour mixture and two of milk, beating until smooth. Stir in chocolate chips.
- Scoop batter into prepared muffin cups. Bake in preheated oven for 20-25 minutes or until tops of cupcakes spring back when light touched. Let cool in pan on rack for 10 minutes. Remove from pan and let cool completely on rack.
- Top cooled cupcakes with frosting.

Wow, these cupcakes are amazing. They have such great peanut butter flavor - it actually sticks to the roof of your mouth just like when you eat peanut butter by itself. It is delicious and sure to be any peanut-butter lover's favorite cupcake. It does taste just like Reese's chocolate. The only thing is that mine were kind of flat on top - maybe my baking powder is out-of-date. They still tasted wonderful, though! I frosted them with "Recipe#89207", which made just the perfect amount for 12 cupcakes.

Canadian girl that loves to cook for herself and for everyone around her!! I always enjoyed cooking but more so since I started taking better care of myself by eating healthier food (I am a Weight Watchers Lifetime member!). I still love my chocolate though!
