Chocolate Orange Fudgy Cake

  • Grease or spray a 26 cm (10") tart tin or dish.
  • Set oven to 160°C.
  • Place chocolate an butter in a medium saucepan. Melt over a low heat, whisking occasionally until combined. Remove from heat and add the sugar and vanilla. Whisk well.
  • Add the lightly beaten eggs, then the dry ingredients.
  • Stir in the orange zest. Stir mixture until smooth then spread in tart dish.
  • Bake for 20 to 25 minutes until centre is just firm.
  • Remove from oven and allow to cool for at least 10 minutes in the tin or dish. Turn on to a rack to finish cooling.
  • Topping: Chop the 100g of dark chocolate into small pieces and place in a bowl.
  • Bring the cream to the boil and pour over the chocolate. Stir until blended.
  • Allow to cool stirring occasionally. Whisk until thick then spread over the cake. Decorate cake edge with shaved almonds.
