This is not a cake! It has a full chocolaty flavor without being overly rich or sweet. This also has to be one of the most nutritious way to enjoy chocolate. Feel free to add raisins, cranberries, nuts, or chocolate chips as well.
- 1 cup cocoa powder
- 1 cup whole wheat flour
- 1 cup white flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄2 cup brown sugar
- 2 eggs
- 1 cup orange juice
- 1⁄4 cup vegetable oil
- 1 tablespoon vanilla
- 1⁄2 cup honey
- orange zest (optional)
- Preheat the oven to 325°F.
- Mix together the cocoa powder, flours, baking soda, salt, and brown sugar.
- In a separate bowl, beat the eggs.
- Add the orange juice, oil, vanilla, and honey to the eggs and mix well.
- Mix the dry ingredients into the second bowl, making sure to crush any clumps of cocoa powder.
- Zest an orange over the bowl and mix it in .
- Pour the batter into a greased loaf pan and bake it for approximately one hour, or until a toothpick inserted in the center comes out clean.
I made this yesterday for Thanksgiving and was very pleased with it. I used 3/4 cup of cocoa and that was plenty, it yielded a very very dark chocolate loaf that had a strong orange flavor. For sweetening I used 1/4 cup of Splenda Brown Blend and replaces the honey with Splenda regular. My pan was 9x5 and that made a flatter loaf, I'd use an 8x4 next time. High yumm factor if you like dark chocolate. :D
