Chocolate Oatmeal Raisin Cookies

• DRY INGREDIENTS

• 315.37 ml all-purpose flour (165g)
• 236.59 ml oatmeal (120g)
• 3.28 ml baking powder
• 1.23 ml baking soda
• 2.46 ml salt
• 2.46 ml ground cinnamon
• 1.23 ml ground nutmeg
• 0.61 ml ground cloves (optional)

• WET INGREDIENTS

• 99.22 g chocolate, blocks (100g)
• 59.14 ml milk (60g) or 59.14 ml soymilk (60g)
• 78.78 ml oil, your choice of shortening, butter, vegetable oil... (80g)
• 157.80 ml sugar (120g, 1/2 cup is actually enough because raisins are sweet)
• 29.57 ml brown sugar (30g)
• 2.46 ml molasses (optional, just to enhance the brown sugar aroma)
• 118.29 ml raisins (90g) or 118.29 ml cut up dried fruits (90g)
• 118.29 ml chopped nuts, of your choice (90g) (optional)

directions

1. Preheat oven to 375°F (180°C).
2. Mix the dry ingredients well; set aside.
3. Put milk, butter and chocolate in a pot of about 4 quarts, warm slightly and slowly just to melt the chocolate pieces. Add brown sugar and stir until lumps disapear.
4. Move the pot away from fire, stir in the sugar, molasses, raisin, nuts and, finally, the dry ingredients.
5. Let stand for about 10 minutes.
6. On a cookie sheet, spoon the dough and drop them 2 inches apart. If the dough drops are more than 1/2 inch high, press down with a spoon so it will cook evenly.
7. Bake 11-13 minutes until slightly browned.
