Can you say so good your eyes will roll back and you'll moan? I found this recipe in my grandma's handwritten notes after she died a few years ago and I thought, no flour? In a cookie? I made them and after the first taste I was in love.
- 1 cup butter
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 2 cups quick oats, no substitutes
- 2 cups coconut
- 2 teaspoons baking soda
- 3⁄4 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1 cup milk chocolate chips
- Cream butter and both sugars.
- Add the rest and mix together.
- This is a stiff dough.
- Roll pieces to the size of walnuts and place on cookie sheets.
- Bake at 350 degrees for 10 to 12 minutes or golden brown.
This was more like candy if you follow the recipe. Horrible cookie. I was able to save the dough by adding 1 cup of flour and refrigerating for a few hours. They were VERY good after the tweak.
This was a disaster....they all ran together into a thin sticky mess on the cookie sheet..I put the rest of the dough in a pan, trying to salvage it, with the intention of making them into bars...that flopped too. I won't be making this one EVER again..sorry but it was a waste of good ingredients.
The "cookies" ran together and stuck to the cookie sheets. Greasing the sheets just made the cookies spread even more. I used shredded coconut; maybe I should have used flaked. At any rate, we now have lots of tasty crumbs to sprinkle on ice cream or layer with yogurt and berries.
