  • 12 ounces squares semisweet chocolate, chopped
  • 1 13 cups whipping cream, divided
  • 13 cup water
  • 14 cup dark corn syrup
  • 1 teaspoon rum extract
  • 1 (8 ounce) package cream cheese, cubed

Directions

  1. In a heavy saucepan, combine chocolate, 1/3 cup of cream, water and corn syrup.
  2. Cook and stir until chocolate melts and mixture is smooth.
  3. Cool for 20 minutes.
  4. Whisk in extract and cream cheese until smooth.
  5. In a small mixing bowl, beat remaining cream until stiff.
  6. Fold into chocolate mixture.
  7. Refrigerate at least 4 hours.
  8. Make sure to cover.
