These delicious treats will be a family favorite for sure! Make plenty to add to your cookie and dessert trays for the holidays! Cooking time is per pan of cookies.

Good cookies. I cut the sugar down to 2/3 cup and increased flour to 1 3/4 cup and they were plenty sweet.

  1. In a bowl combine flour, baking powder, and salt. Set aside.
  2. Over hot water, melt 1 cup mint morsels, stirring until smooth.
  3. In a bowl beat butter and sugar, until creamy.
  4. Add melted morsels and vanilla.
  5. Beat in eggs.
  6. Gradually beat in flour mixture.
  7. Stir in remaining morsels.
  8. Wrap dough in plastic wrap, and freeze about 30 minutes, until firm.
  9. Preheat oven to 350°F.
  10. Shape dough into 1" balls.
  11. Coat with confectionery sugar.
  12. Place on ungreased cookie sheet.
  13. Bake 10-12 minutes, until tops appear cracked.
  14. Let stand 5 minutes on cookie sheet.
  15. Cool completely.
