Chocolate & Macadamia Baked Bananas

"This is as easy a recipe as I’ve seen anywhere and SO delicious: just have a glance at the ingredients and the instructions. Do recipes come any easier than this? This is Todd Cameron’s recipe and it appeared in the October issue of the Australian magazine ‘Delicious’. Todd is the chef at the Gaia Retreat & Spa near Byron Bay. How do I explain Byron Bay to non-Australians? Well the name of the retreat should give you some idea. Byron Bay, situated on the New South Wales coastline, on the Pacific Ocean, has long been the retreat of hippies – or aging hippies – and in more recent years properties there have been much sought after by Australian actors, such as Russell Crowe and Paul Hogan. So although Byron Bay still has New Age leanings, it has also become the stomping ground of the rich and famous. That said, this recipe with its three ingredients and no chopping or grating, whisking or kneading, couldn’t be simpler. Or quicker!"

  • Preheat the oven to 180˚C.
  • Leaving the skin on, cut along the inside curve of each banana, without cutting all the way through. Open the bananas out a little and fill them with chocolate and macadamias.
  • Place the bananas on a baking sheet for 10 minutes or until they are heated through and the chocolate is melted.
  • Serve hot.

  2. Wow! These were so simple yet so decadent tasting! I topped each one with a tiny scoop of maple ice cream. I will definitely be making this many times over. (Only I will be skipping the ice cream...in order to make it healthier) Made and reviewed for the Best of 2009 Tag Game. Thanks MarraMamba for posting bluemoon downunder's recipe in your game book.

  4. I used regular bananas...not sure what a "sugar banana" is. I used semisweet baking chocolate because that was what I had on hand, shredded it up so it would melt. I used almonds, also because I had those and macadamias are sooo expensive here. The cooking temp was questionable, because it was posted as 180 and 730 degrees C. Recipezaar was unable to convert this, as was I! So I cooked at 350 degrees based on Jessica K's review for 10 minutes....not long enough, my chocolate wasn't melted. So I cooked for another 5 minutes. The chocolate never melted, but the bananas were hot! So I served with ice cream on top after reading HokiesLady's review! Made for Zaar Stars Tag.
     
  5. I'm raving about this dish! My DS and I enjoyed this so much!! The bananas were perfectly baked with the chocolate and nuts in 8 minutes! I even was able to use some really ripe bananas for this recipe. My DS said - wouldn't this be great with a scoop of icecream too - so I think next time we are going to try that for fun! I did make a change and used chopped almonds in place of the macadamia nuts (too expensive here right now) and they tasted great! Thanks blue for a great keeper!! Made for the Gimme 5 Tag Game. :)

July 2008 update: VERY happy to be back on Zaar after about a two year absence due to having had no internet connection at home, and having been too unwell for a time so that getting re-connected wasn't even a priority! <br> <br>And really looking forward to getting back into the Zaar world and connecting again with the many wonderful people I knew before, and new people, of course!
