Here is a healthy, low-fat & dairy free yummy bread, which is a hybrid of many others. Get the benefit of using half whole wheat flour, flax, and no fake sugars! This recipe makes 2 loaves.

  1. Preheat oven to 350 degrees. Grease 2 loaf pans or line with parchment.
  2. Combine flax seed meal with boiling water and let sit for about 15 minutes.
  3. Combine dry ingredients.
  4. Combine wet ingredients (except zucchini), then add to dry ingredients.
  5. Stir in zucchini.
  6. Spoon into 2 loaf pans, and bake for about 1 hour or until a pick inserted in the center comes out clean.
  7. Cool in pans on a wire rack for 20 minutes, then remove and cool completely.
  8. Enjoy!
