I made this frosting to go along with Cuba Libre Cupcakes. It was really delicious, and I think I'll try it on other types of cupcakes as well.
- 1⁄4 cup butter or 1⁄4 cup margarine, melted
- 1⁄3 cup cocoa powder
- 2 cups powdered sugar
- 1⁄4 cup milk, plus
- 2 tablespoons milk
- 1 1⁄2 teaspoons lime juice
- Melt butter and mix with cocoa powder.
- Alternate adding in powdered sugar and milk, mixing the whole time. You may have to add more powdered sugar if it needs to be thickened.
- Mix in lime juice.
