Chocolate Guinness Layer Cake

- 473.18 ml guinness stout beer (or use a similar beer)
- 473.18 ml cold butter, cubed
- 354.88 ml unsweetened Dutch-processed cocoa powder
- 946.36 ml all-purpose flour
- 946.36 ml sugar
- 14.79 ml baking soda (yes, 1 tablespoon!)
- 7.39 ml salt
- 4 large eggs
- 315.37 ml sour cream
directions
- Preheat oven to 350 degrees F(set oven rack to second-lowest position).
- Grease three 9 or 10-inch round cake pans then line the bottoms with parchment paper, then butter the paper.
- Bring 2 cups stout beer and 2 cups butter to a simmer in a large saucepan over medium heat.
- Add in cocoa powder and whisk until mixture is smooth; cool slightly.
- In a large bowl whisk the flour, sugar, baking soda and 1-1/2 teaspoons salt.
- In another bowl using an electric mixer beat eggs until thick and lemon coloured (about 5-6 minutes, this is important must beat for no less than 5 minutes!) add in the sour cream and beat until well combined.
- Add the stout/chocolate mixture to the egg mixture; beat JUST to combine.
- Add in the flour mixture and beat on low speed until combined.
- Divide the batter equally among the three pans.
- Bake for about 35 minutes, or until the cakes test done.
- Cool in pans for 10 minutes, then remove to plates.

This is easily one of the best cakes I've ever tasted~and chocolate cakes have never been my first choice. I frosted it with Mean Chef's Dark Chocolate Ganache (#37844), creating a very rich dessert. Everyone who's tried it has loved it~after having a piece, my mom stopped nagging me with, "why didn't you just make a cake from a box?" Now I'm just looking for an excuse to make it again. :)

OMG! Definitely a favorite at our house! I take this cake to work for parties, and have even had coworkers specifically ask me to make it for birthdays. It is moist and rich, but not to sweet, definitely a dark chocolate flavor. I always serve it with a fluffy chocolate buttercream on top, or I have even sprinkled it with powdered sugar and drizzled it with ganache. Awesome cake!

Marvelous! I have 4 more bottles of Guinness to use up (guest didn't drink up/we don't care for) and I may very well make this cake (well, cupcakes) until they're gone! Yummy! I made a 1/2 recipe and got 24 perfect cupcakes - 17 minutes @ 350. Frosted with a 7-minute frosting and dusted with cocoa powder. Thanks once again, Kittencal. I'm off to make your French bread now!
