Chocolate Guinness Layer Cake

"A very moist dense chocolate cake that gets even better with age! The dark beer is what gives this cake an intense flavor! This cake will not fit into a regular size 12-cup bundt pan."

  • Preheat oven to 350 degrees F(set oven rack to second-lowest position).
  • Grease three 9 or 10-inch round cake pans then line the bottoms with parchment paper, then butter the paper.
  • Bring 2 cups stout beer and 2 cups butter to a simmer in a large saucepan over medium heat.
  • Add in cocoa powder and whisk until mixture is smooth; cool slightly.
  • In a large bowl whisk the flour, sugar, baking soda and 1-1/2 teaspoons salt.
  • In another bowl using an electric mixer beat eggs until thick and lemon coloured (about 5-6 minutes, this is important must beat for no less than 5 minutes!) add in the sour cream and beat until well combined.
  • Add the stout/chocolate mixture to the egg mixture; beat JUST to combine.
  • Add in the flour mixture and beat on low speed until combined.
  • Divide the batter equally among the three pans.
  • Bake for about 35 minutes, or until the cakes test done.
  • Cool in pans for 10 minutes, then remove to plates.

  1. Great option for a not-too-sweet chocolate cake; the stout flavor of the beer came through very nicely. I used half a recipe which fit into a bundt pan nicely (baking time about 40 min @ 350F)
     
  2. This is easily one of the best cakes I've ever tasted~and chocolate cakes have never been my first choice. I frosted it with Mean Chef's Dark Chocolate Ganache (#37844), creating a very rich dessert. Everyone who's tried it has loved it~after having a piece, my mom stopped nagging me with, "why didn't you just make a cake from a box?" Now I'm just looking for an excuse to make it again. :)
     
  3. OMG! Definitely a favorite at our house! I take this cake to work for parties, and have even had coworkers specifically ask me to make it for birthdays. It is moist and rich, but not to sweet, definitely a dark chocolate flavor. I always serve it with a fluffy chocolate buttercream on top, or I have even sprinkled it with powdered sugar and drizzled it with ganache. Awesome cake!
     
  4. Marvelous! I have 4 more bottles of Guinness to use up (guest didn't drink up/we don't care for) and I may very well make this cake (well, cupcakes) until they're gone! Yummy! I made a 1/2 recipe and got 24 perfect cupcakes - 17 minutes @ 350. Frosted with a 7-minute frosting and dusted with cocoa powder. Thanks once again, Kittencal. I'm off to make your French bread now!
     
  5. Extremely delicious! Although I heavily sprayed two bundt pans, the cake stuck to the pan and I was unable to frost or serve to guests.
