This recipe is from a Martha Day book called 1000 recipes, which I bought from the book people at work. I looked at some other frosting recipes and although similar, this one has an egg in the mix. The mix yields around 2 cups or 1lb.
- Put chocolate and butter in a heatproof bowl and place over a pan of simmering water, remembering not to let the water touch the bottom of the bowl.
- Stir occasionally till both are melted, add the egg and beat well.
- Remove the bowl from the saucepan and stir in the icing sugar, beat till smooth and glossy.
- Pour immediately over the cake for a smooth finish, or leave to cool for a thicker spreading/piping consistency.
