Chocolate Fudge

"This comes from the Nigella Lawson cookbook Nigella Express. It's such a versitile recipe and is fantastic to give as a gift. A few variations - I've added Bailey's Irish Cream to this recipe and just reduced the condensed milk a little. I've also added peppermint extract which was delicious!"

  • Put all the ingredients in a a bowl, I prefer to use a glass bowl as there's less chance of the chocolate splitting and it's easier to use in the microwave.
  • Microwave the mixture on high for 30 seconds. Remove the bowl and give a quick stir with a metal spoon. Then return it to the microwave for another 30 seconds on high.
  • Remove and stir until all the chocolate and butter has melted and the mixture is smooth and glossy. Pour mixture into a 20cm x 20 cm baking tin lined with foil and place in the fridge for 4 hours or until firm.
  • When the fudge is firm, turn it out onto a chopping board and peel back the foil. Cut the fudge into small peices about 2x2cm as it's quite rich.
  • Perfect for an after dinner treat with coffee.
