Ah, the sweet sugar high of fudge! I used Lindt's 85% chocolate, and wouldn't hesitate to use their 99% (there's certainly enough sugar to sweeten things!). The honey was a lovely addition! Thank you for sharing!

This is not the conventional American fudge, but oh my, it is delicios. The honey underlines the chocolate flavor, the texture is velvety. And it's easy to make. I added broken cashews and bourbon soaked raisins and the result was a fabulous confection, greatly enjoyed by all.
