Serve with Coconut Icing. ----------------------------------------------------------------------------------------------------------------- These are very small as is as I used whole walnuts and processed them down. If you used 1 cup of already processed walnuts you'd get much more. I didn't have cupcake holders so I lined shot glasses with plastic wrap to make these. I was able to get enough to fill 4 - 1 oz. shot glasses.

  1. Cupcake:Process walnut and dates in a food processor until mixture sticks together.
  2. Add sea salt, vanilla extract and almond extract.
  3. Roll small eight balls out of the mixture and place each one in 1 ¼-inch baking cups.
  4. Mold the sides of the baking cups around the balls and form into a cupcake shape.
