Chocolate Crinkles (Gluten-Free)

Ingredients:

Serves: 12

Yield: 36.0 cookies

• ½ cup vegetable oil
• 4 ounces dark chocolate
• 2 cups sugar
• 3 eggs , room temperature
• 2 teaspoons vanilla
• 1 ½ cups rice flour (Rice flour mix)
• 1 tablespoon rice flour (Rice flour mix)
• ½ teaspoon xanthan gum
• ¼ teaspoon salt
• 1 teaspoon baking powder

Directions:

1. Melt chocolate, then mix with oil and sugar.
2. Mix in eggs, one at a time. Stir in the vanilla.
3. Add rice flour mix, xanthan gum, salt and baking powder. Mix everything together, then place bowl in the fridge for a few hours.
4. Heat oven to 350°F Form dough into small balls. Place them on a greased cookie sheet (about 1.25" apart), and bake 10-12 minutes.
