  • Preheat oven to 350°F.
  • In a large bowl, whisk the sugar, buttermilk, oil, egg, and vanilla together until smooth. In a medium bowl, sift the flour, cocoa and baking soda together and add to the buttermilk mixture, stir until the ingredients are just combined. Be careful not to overework the batter, If there are lumps, they will disappear during baking baking. The less you work the batter, the more tender the pies will be.
  • Fill 6 nonstick muffin top cups with the batter. Bake for 10 minutes in the center of the oven. To prevent the pies from getting soggy after baking, remove the cooked muffins from their cups and cool them on a rack. Serve warm.

  1. I made these to use up 1 cup of buttermilk that I had on hand. I just doubled the recipe and made a dozen. These are good as moist chocolate cupcakes. I had to bake mine 18 minutes and I would say they would be best with either powdered sugar on top or frosting.

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
