Chocolate Covered Cherry Cookies

These will take center stage when you set out your Christmas goodies. I found these on a blog called Abby Sweets. They are baked in 1-inch paper or foil baking cups which means you can use the Christmas ones. The photo showed these with a chocolate glaze. Red and green sprinkles were used so they looked festive! The stems seem to shout out to everyone, "Here I am!" I couldn't find any other recipe quite like this here, so here it is! The recipe did not give the amount of cookies and I haven't made them yet, so I am making a guess.

  1. In a medium bowl, beat butter with mixer on medium high speed for 30 seconds.
  2. Add sugar, cocoa, baking soda and baking powder; beat until combined.
  3. Add the beaten egg and 1 tablespoon reserved cherry juice; beat about 30 seconds.
  4. Slowly beat in as much flour as you are able with the mixer and stir in any remaining flour with a wooden spoon.
  5. Shape a scant teaspoon of dough around each cherry.
  6. Place each in a 1 inch paper or foil baking cup.
  7. Place 1 inch apart on ungreased cookie sheets.
  8. Bake in a 350 degree oven for 10-12 minutes or until the top looks dry.
  9. After they have cooled, top with melted chocolate or your favorite chocolate glaze.
  10. Top with sprinkles if desired.
