Cake-like and very moist! These are also great with white chocolate.

  1. Cream the oil, sugar and eggs.
  2. Add remaining ingredients.
  3. Drop by teaspoonfuls on a lightly greased baking sheet.
  4. Bake at 350 degrees F for 10-15 minutes till light golden brown.

Yum! This was just what I was looking for. I used semi-sweet chocolate chips, and made a triple-and-a-half batch since I was using a big (29 oz) can of pumpkin, and they are wonderful! I did substitute pumpkin pie spice for the individual spices listed. They baked up big and fluffy. I used a 3-Tbsp. size scoop and the longer baking time with two cookie sheets full in the oven. Thanks for a great recipe that will be one of my go-to fall recipes from here on out! :)

I made a half batch and ended up with 2 dozen good sized cookies. I really liked the pumpkin cookie dough - soft and plump with just the right amont of spice. Didn't really like the white chocolate and probably should have gone with a semi-sweet instead. Could even see doing with raisins or dried cranberries -- along with a little more spices. (Additional spices would not complement the chocolate.) Thanks Kaarin for a wonderful fall treat.
