Chocolate Chip Oatmeal Muffins

"These muffins are high in fiber and high in taste. A healthy treat I am happy to send in my child�s lunch. Oat flour can be made by grinding oatmeal in a coffee grinder. Makes 24 standard size muffins."

  • Preheat oven to 375*. Prepare two muffin tins with paper/parchment liners.
  • Combine oat flour, coconut flour, baking powder, baking soda, and sea salt.
  • In a separate bowl, beat egg whites until they form peaks.
  • In a third bowl, whisk together canola oil, honey, molasses, vanilla, buttermilk, milk, and egg yolks.
  • Add the wet mixture to the dry and mix until just combined.
  • Stir in the chocolate chips.
  • Fold in the egg whites using a flat spatula.
  • Using a disher, scoop into lined muffin tin (fill 75%-100%).
