- 1 1⁄4 cups whole wheat flour
- 1⁄2 cup quick-cooking oats
- 1⁄8 cup quick-cooking oats
- 3⁄4 cup Splenda granular
- 1 1⁄4 teaspoons baking soda
- 1⁄2 teaspoon salt
- 1⁄4 cup peanut butter
- 1⁄4 cup unsweetened applesauce
- 1 egg
- 1 cup buttermilk
- 2 1⁄4 cups all-bran cereal
- 3⁄4 cup semi-sweet chocolate chips
directions
- In a bowl, combine the flour, oats, sugar, baking soda and salt; set aside. In a large mixing bowl, beat the peanut butter and applesauce until combine. Beat in the eggs and buttermilk, Stir into the dry ingredients just until moistened. Fold in the cereal and chocolate chips.
- Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 degrees F for 10 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
