Yum! From Taste of Home's 12 Prize Winning Muffins (Feb/Mar 2006). Opted to add chocolate chips instead of icing the tops. I accidentally used baking powder instead of baking soda and it turned out great! Banana flavour is mild (so hubby will eat)- if you'd like it heartier, add another banana.

  1. Preheat oven to 350°F Place paper liners in muffin cups.
  2. In a small mixing bowl, stir together flour, baking soda and salt.
  3. In a large mixing bowl, cream shortening and sugar.
  4. Add egg and beat well.
  5. Add bananas and vanilla. Mix well.
  6. Stir dry ingredients into wet.
  7. Fold in chocolate chips.
  8. Scoop into muffin cups.
  9. Bake for 23-28 minutes.
