- 1⁄2 cup butter, softened
- 1⁄3 cup sugar
- 1⁄2 cup light brown sugar
- 1 egg
- 1⁄3 cup smooth peanut butter
- 1⁄2 teaspoon vanilla
- 1⁄4 cup all-purpose flour
- 1⁄2 cup whole wheat flour
- 1⁄4 cup wheat germ
- 1⁄4 cup flax seed, ground (optional)
- 1 cup rolled oats
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1⁄2 cup walnuts
- 1 (6 ounce) package semi-sweet chocolate chips
directions
- Preheat oven to 350.
- In a large bowl beat butter with sugars until smooth.
- Beat in egg, peanut butter and vanilla until will blended.
- In another bowl, whisk together flours, wheat germ, ground flax seed, oats, baking soda and salt; beat or stir into butter mixture until smooth.
- Stir in chocolate chips and walnuts.
- Spread dough evenly in a buttered 8-inch square baking pan.
- Bake until pale golden brown, about 25-30 minutes. Let cool on rack for about 10 min, then cut into squares.

This was my first time using flax seeds. I wish I had ground them, as the recipe called for. Brownies were gooey, but not as peanut buttery as I was hoping. Omitted wheat germ (added more oats) and walnuts. Brownies were a weird consistensy when filling in the pan, but came out okay after baked. If I make again, will definately ground the flax seeds, and maybe add pb chips as well!
