  1. In a saucepan, melt butter over low heat.
  2. Gradually add cocoa and sugar, and blend thoroughly to make a smooth sauce.
  3. Add cheese, and blend well.
  4. Stir in cinnamon, nutmeg, vanilla, and almond extract.
  5. Gradually add milk until fondue is of desired consistency.
  6. Add brandy (do NOT stir); immediately ignite brandy.
  7. Serve over ice cream, or use as a dip.
