Chocolate Cashew Butter

I've had this recipe for so long, I can't remember where I got it from. It's very good on toast, crackers, vanilla wafers, or whatever you would like to use it on. It is also great for gift giving. I use any brand roasted, salted cashews or unsalted if you wish. You could also roast your own. I sometimes add 1/4 teaspoon vanilla.
Directions:

Place nuts in blender container or food processor bowl. Cover; blend or process until finely ground. Add half of the butter and half of the chocolate.

Cover and blend again. Add remaining chocolate and butter and the coffee mixture and blend about 3 minutes or until smooth.

To store, cover and chill up to 1 month. To serve, let stand at room temperature 1 hour. Makes about 1 cup. 1 tablespoon per serving.

For gift giving, layer this rich-tasting spread and additional whole cashews in a crock or pretty jar.
