Chocolate Caramel Muffins (Surprise)

"I found this in the woman's day cookbook, which is for cooking with kids. This is a great and easy recipe, when you want to cook with the kids or grandkids! These muffins are best served warm, I have used other sweets Rollo's are good and CarAmello chocolates are divine!"

  • Preheat the oven to moderate, about 180c.
  • Lightly grease a 12 hole muffin pan.
  • Sift flour into a large bowl, and stir pecans and chocolate.
  • In a jug/bowl, whisk the milk butter and egg together.
  • Make a centre in the flour mixture add the milk mixture all at once, and mix lightly until combined ~ and please dont overmix!
  • Spoon enough mixture into each of the muffin holes ~ only to half fill and.
  • top each with a half caramel and cover evenly with the remaining muffin mixture.
  • Bake for 20 - 25 minutes or until a skewer comes out clean and dry when inserted into centre of muffin.
  • Transfer to wire rack and cool.

  1. I'm sure it would have been a lovely recipe, except for the fact that there is no sugar in the recipe! I followed it till the end and only realized the sugar was not included when I tasted it. This led to trying to add the sugar at the end, which led to over mixing, which led to tough muffins :(
