Choco-Ginger Snowballs

"Next time someone lectures you about unhealthy eating, whip out the excuse, "It could be worse, I could be eating choco-ginger snowballs!" Unless, of course, you are actually eating choco-ginger snowballs in which case, they're right. No need to fear though, one bite and they will soon come over to the dark side. Also dubbed 'ginger heart attacks' these wickedly delicious snowballs make a delicious treat, albeit a very rich and unhealthy one. Adapted from a failed ginger slice recipe, these are easy to make and disappear even faster. Enjoy. Cooking time is for melting of butter and chocolate."

  • Mix crushed biscuits, 3/4 cup of coconut and ginger in a large bowl.
  • Over medium heat, melt butter and condensed milk until smooth and pour over dry mixture. Melt chocolate and mix through.
  • Roll mix into small balls and roll in coconut and refrigerate until firm.

I have a lot of food limitations...I am vegetarian, I don't eat dairy and I am gluten free, therefore a lot of my recipes are suitable for these allergies, however, I love to cook and bake for my family so I have included some not-so-restrictive recipes.
