      I have yet to make this with the cherries! None of us are vegan, but i love saving money on eggs and dairy products! Don't try in a pan taller than 2" or the middle doesn't cook. Without cocoa, this makes a great banana cake (mashed banana to replace some of the oil) or spice cake (just, er, add cake spices) and I often use orange juice instead of water.

      This cake was just OK. We ate it, but decided it just wasn't good enough to be a keeper. It didn't have that gooey-rich taste that I love in chocolate cake.

      My favorite when i was a child, and i had lost the recipe. i'm so glad i can now share it with my friends! I reduce the amount of sugar by 1/2 cup and use two cans of cherries instead of one: it makes the dessert more flavourful and moist. Enjoy with a tall glass of cold milk!

      Just made this for my husband. He liked it. My kids loved it too. Very simple to make. I was worried it wouldn't "work" when I turned it up-side down. But it did and it looked beautiful. My family put chocolate whipping cream on it. Yum!
