I'm currently on a quest for healthy salads and dressings that I can incorporate into my everyday menu. I found this in one of my old issues of Cosmo. About 14 calories per tbsp, it's a really healthy alternative to mayonnaise.
- 1 cup low-fat yogurt
- 2 tablespoons cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh chives or 1 tablespoon frozen chives, chopped
- Whisk all ingredients until smooth and thickened.
This was good. I used some in a chicken salad instead of mayo and I liked the change of pace. I enjoyed the flavor of the dijon as well. I think it would be good just spread on sandwiches or maybe as a dip for veggies. Thanks!
