This made a wonderful brunch this weekend! I love using gruyere in egg dishes, but I'd never tried it with Canadian bacon before. Very tasty combo. Thanks Nimz!

FanTAStic. I made a three-egg omelette, increasing the other ingredients by one-third. The combination of chives, gruyere and canadian bacon is excellent. Try it, you'll like it! I served it with Broiled Mozzarella Tomatoes #133133 which was an inspired pairing.

Very nice change from the old ham and cheddar! I love Gruyere, but had never used it in an omelet. Going to try it in an asparagus omelet next! Nice melting cheese. I found Canadian bacon that has been peppered, so that added a nice flavor also. Thanks for posting this!
