Chipotle Veggie Dip

"I love Chipotle. It's hot, smoky, and sweet all at the same time. This is a great recipe, and real simple to make. If you like more spice, it's as simple as adding more chipotle paste and mixing it in. I buy a can of chipotle chilies in adobo sauce (Mexican food section at your grocer), and put the whole thing in a food processor. Then I keep in the fridge for when ever I make this recipe. That way I can add more when ever I want to turn up the heat!"

  • Whisk all ingredients together in a mixing bowl.
  • Taste.
  • If it's not hot enough, add more chipotle paste. But, be careful. After you chill this a little, the chipotle seems to come alive.
  • Serve with veggies or chips. I like to serve with carrot sticks or baby carrots, grape tomatoes, celery sticks, and cauliflower (double up on carrots as they seem to go first).

Love to Grill. Currently use a Webber Genisis 2000 (3 burners). Have a large, texas side saddle smoker, but have only used it once. Hope to find more time and more uses for it.
