Fabulous! I used Mexican Rice as the rice base. Instead of the taco seasoning, I subbed the full amount for Adobo Seasoning. I, also, used my 16 yo's World Famous Never Written Down Guacamole. I may be able to sell this recipe to a competitor's restaurant chain and I'll put the proceeds towards my annuity or better yet, lottery tickets. Could be lucrative.

I'm a huge Chipotle fan and I love the layering of ingredients in this recipe. I made my own guacamole. I did think that there was too much seasoning on the chicken. Maybe half the taco seasoning packet would have been perfect for us. I will try this again, making the adjustment. I used 4 boneless, skinless chicken breasts. Thank you for posting!

My husband and I simply love chipotle restaturant and our favorite is the burrito bowl. This recipe is so easy and the flavor is amazingly similar to the original from the chain. My husband kept saying how good it was on every bite.I added cilantro, olive oil, salt and lime juice to the rice. I also made the roasted chili corn to go with it. We had an amazing dinner. Thanks for the recipe.

These were excellent! The chicken was seasoned perfectly, and the Mexican rice was a nice touch. My kids loved choosing their own toppings and mixing everything up. I don't live near a Chipotle anymore (so sad!), so these brought back some delicious memories! Thanks so much!

My husband and I LOVE these! We have made this recipe several times. I would increase the lime and cilantro in the rice - the first time we made it we really couldn't taste the cilantro & lime. Also, we couldn't find any ADOBO seasoning so we always leave it out. Next time, instead of using Rotel as a topping, I am going to make some homemade Pico de Gallo. Thanks for posting!
