This soup is fantastic! It makes ordinary corn chowder extraordinary! This is very stick to your ribs, but the chipotle does cut the cream taste and makes it a less heavy tasting from the ordinary chowder recipes. My confession is: I found this recipe ages ago, and *thought* I'd reviewed it. Since then, I have made this probably over 20 times. I frequently quadruple the recipe so I have a few freezer bags full to give to family or friends if needs be. Everyone loves it! For changes - sometimes I add a cup or so of cubed ham instead of the bacon. I also double the chipotle for dh and I cuz we like it stronger. I also add some chopped fresh corriander (cilantro) right before serving if I have it on hand. Thank you Kitten and sorry I didn't review before!person found this review Helpful. This was an excellent soup. I doubled the recipe and one DS ate 4 bowls and I must admit I had two. There are about two bowls left after the 4 of us had dinner! I had no celery or bell pepper but will make it again soon with both. Might be yummy with chunks of rotisserie chicken in it. The heat was pretty subtle - maybe add another 1/4 chipotle next time. I made this delicious chowder for dinner last night and am enjoying the leftovers for lunch today. The only major change was the omission of the bell pepper. The minor changes were simply just not measuring the ingredients so I'm not quite sure how much of any one ingredient I ended up with, although I'm sure it came fairly close. I didn't have quite enough corn, so the potatoes were increased by double. I used one small chipotle which gave flavor and just a bit of spice. Used fingerling potatoes as that's all I had. It didn't thicken up much (although I probably added more liquid than called for) so I added corn starch at the end to thicken it. The taste was great; more importantly, my husband loved it! I love corn chowder and the spice just makes it that much better. This was easy to make and a great winter treat. Thanks for sharing!people found this review Helpful. This soup is very flavorful and easy to make! I used a roasted red pepper and 3/4 cup half & half cream. The recipe yielded 7 1/2 cups ~ While still hot I pureed half of the soup in my blender then returned it to the saucepan. It was spicy enough for us so I chose not to include any cayenne pepper.
